The 19-year old struck on 65 and 70 minutes to hand the Wanderers second string their first win in nearly six weeks in a victory which sees them move off the bottom of the FA Premier Reserve League.
Bolton had to claw themselves back into the game as Sunderland took the lead on seven minutes thanks to a fine 20-yard shot from midfielder Jake Richardson which had goalkeeper Chris Howarth well beaten.
French winger Fabrice Fernandes nearly brought the Trotters back into the game with an equalising goal but his volley was well saved by the Black Cats goalkeeper Trevor Carson.
Carson did his upmost to prevent Bolton from equalising on 24 minutes as he saved Bedi Buval's header following good work down the flank from Vaz-Te. However, the Northern Irish youth international custodian could not prevent Rhys Powell from tapping home the resulting loose ball to bring the game level.
The second half saw Bolton wrap things up shortly after the hour as Vaz-Te netted the eventual winning goals. His first effort came when he lobbed Carson from long range after the Irishman had come out of his goal and the second followed some five minutes later when he fired in the matchwinner off the post after a cross from Australian wing-back Scott Jamieson.
Ex-Leeds United midfielder Martin Woods struck with a late consolation for Sunderland in the final minute of the game but this mattered not to the Wanderers as they recorded a morale boosting victory.
